Roundworms – Anisakiasis may be caused by parasitic roundworms. These worms inhabit marine or saltwater fish, such as salmon. Infections are most prevalent in regions where raw or lightly pickled or salted fish is consumed frequently, including Scandinavia, Japan, the Netherlands, and South America.
In contrast to many other parasites transmitted by fish, Anisakis roundworms cannot survive in humans for very long. They attempt to burrow into the intestinal wall, where they eventually become trapped and die. This may result in a severe immune response with inflammation, abdominal pain, and vomiting ( 9, 10 ).
Anisakiasis can cause immune reactions even if the worms are dead when the fish is consumed ( 11 ). Another family of parasitic roundworms may be responsible for the gnathostomiasis disease ( 12 ). In Southeast Asia, Latin America, India, and South Africa, these worms are found in raw or undercooked fish, fowl, and frogs.
However, the disease is uncommon outside of Asia. The primary symptoms are abdominal pain, vomiting, loss of appetite, and fever. It may cause skin lesions, rashes, itching, and swelling in some cases ( 13 ). Depending on where in the host’s body the parasitic larvae migrate, the infection can cause severe problems in a number of organs.
Consuming raw fish on a regular basis increases the risk of parasitic infections. The majority of fish-borne parasites that can infect humans are either uncommon or restricted to the tropics.
The majority of Americans already consume too much sodium, and high sodium levels can lead to issues such as congestive heart failure and kidney disease.

Marco Ficili/iStock/Thinkstock Fish and shellfish served raw or undercooked are common menu items in the United States and around the world. However, are these foods safe for all individuals to consume? It is recommended that foods be cooked to their proper internal temperature in order to reduce the risk of foodborne illness.
- For the majority of healthy individuals, eating raw or undercooked seafood poses a minimal health risk, but for others, the risk can be severe.
- Symptoms of foodborne illness include violent vomiting, diarrhea, and abdominal pain.
- Salmonella and Vibrio vulnificus are two major types of food poisoning that can result from eating raw or undercooked fish and shellfish.
For raw shellfish connoisseurs, especially raw oyster lovers, the risk of Vibrio infections is crucial information. Warm seawater is home to the bacterium Vibrio vulnificus. Although less common than other foodborne illnesses, the Centers for Disease Control and Prevention estimate that Vibrio causes 80,000 illnesses annually.
- To reduce your risk of any type of food poisoning, it is best to adhere to good food safety practices and cook all seafood thoroughly.
- Prepare fin fish until the internal temperature reaches 145 degrees Fahrenheit, or until the flesh is opaque and separates easily with a fork; prepare shellfish until the flesh is opaque; or, for clams, oysters, and mussels, until the shells open.
Contrary to popular belief, hot sauce does not kill bacteria, and while alcohol can be used to disinfect some items, it cannot kill foodborne bacteria such as Vibrio. Additionally, if you choose to consume raw fish, choose previously frozen fish. Because freezing will kill any parasites that may be present.
