A California roll is uramaki sushi composed of avocado, cucumber, and imitation or boiled crab (via Britannica ). Despite its name, the California roll is believed to have been created by Japanese chef Hidekazu Tojo in Vancouver, Canada.
He observed that some diners preferred boiled crab over rolls containing raw fish. A mayonnaise sauce was added to further entice diners. He originally referred to it as the Tojo maki, but today it is more commonly known as the California roll (via Slate ). Some theories claim that the California roll was created in Los Angeles in the 1970s, but Toro is convinced that he was the inventor.
As he explained to Slate in 2019, “In Japan, people are proud. A good chef does not copy. Never.”
